based on the photo, you need some help on flipping stuffs. i can flip like a restaurant cook on my big wok, but on smaller pan, i need help as well and this is what i do:
get the pan hot, then turn to small-med fire. get bottom side crisp, then cover it up to get upper side not so liquid, then easy to flip it straight or transfer to a dish then flip. now get the other side crisp and the finish product will be photo perfect product. although they all more "cake" look......... |
