There is a local hotel that I like but the room I preferred is almost $500 a night.  Might as well be a suite at the Intercon.

If you don't mind pay extra fee, yes your can do that. Back in 2019, I have friends from Toronto stayed at Intercon behind Saigon Post office, they have to pay joiner fee each time they bring girls to room.

The joiner fee is no more than a night basic hotel room rate, right?  Of course it will be in cash

Yes, that can be up to the same fee what you paid for your room but often less

I do not remember how my friend paid for Intercon, I know they booked a suite but may have book a small room just for the girl. That is the price you need to pay if you must stay at the high-end hotel.
