二月份，意大利響起前所未有的雞啼聲，托斯卡尼歷史名酒Chianti Classico全新級別正式誕生。首批35款Gran Selezione葡萄酒挾着各酒莊的新酒同時送到在佛羅倫斯舉行的Chianti Classico Collection 2014試酒會，讓世界各地的酒粉一親新酒王香澤。

Chianti Classico是Chianti八個產區內的其中一個，監管制度跟其他Chianti產區完全不同，到了1996年，成功爭取獨立，與其他鄰近產區劃清界線。去年參加Chianti Classico Collection的時候，大會宣佈將會增加Gran Selezione級別，立即引起酒壇議論紛紛。
意大利的葡萄酒地區監管法例稱為DOC，類似法國的AOC，但DOC分成兩級，最高的DOCG，除了監管葡萄品種及產量，也會保證品質，生產者需要把酒先送到有關當局品試，獲得肯定才可上市。多出的「G」，便是代表品質保證（Garantita）。可是DOC或DOCG的規限並不嚴格，即使貼着DOCG招紙的產品，不見得一定優質。只要你嘗試開始接觸意大利酒，總曾遇過「不吐不快」的慘痛經驗。DOCG對消費者根本沒有半點指引作用，於是有酒莊在生產線上加多一個Riserva珍藏級，表示比一般產品更優質。
很多國家生產的葡萄酒都會在酒標印着「珍藏級」，意大利文是Riserva、西班牙文或葡萄牙文是Reserva、英文是Reserve，但這個字眼只在意大利、西班牙和葡萄牙受到法例監管。換句話說，意西葡以外，所謂的「珍藏級」只是酒莊自吹自擂，事實上，不少智利酒莊會將入門級產品稱為Reserve渾水摸魚。
Chianti Classico的生產商為了提高產品質素，一向都有Riserva系列，有些則只在豐收年才特別釀造。法例規定，Riserva的酒精含量最低不能少於12.5%，比一般Chianti Classico高0.5%，另外釀造時間要在葡萄收成翌年1月1日起計算24個月後才可上市，一般的Chianti Classico則在翌年10月1日後便可面世，差了14個月。Chianti Classico新的Gran Selezione級別，類似西班牙的Gran Reserva，比Riserva再高一級，是意大利首個推出的同類級別。以我所知，Piedmont的Barolo正在密謀可以像法國布根地的Grand Cru概念將產品分級，為Riserva以上增添一個級別；Montepulciano的酒莊亦有以Selezione命名旗下最高級的精品，但統統未獲政府承認。Chianti Classico Gran Selezione喝的是頭啖湯。

■35款Chianti Classico Gran Selezione首次登場。

Gran Selezione的標準比Riserva更高，酒精含量最低不能少於13%，釀造時間比Riserva再增加半年。35款Chianti Classico Gran Selezione出自33家酒莊，年份由2011年到2007年均有，Barone Ricasoli門下的Castello di Brolio 2010及Colledila 2010同時入選。當然，作為全意大利歷史最悠久的酒莊，她的表現一直鶴立雞群，我最欣賞。Antico Lamole的Vigna Grospoli 2011及Lama della Villa 2010亦齊齊稱王。這次試酒會，Colledila 2010、Lama della Villa 2010及Castello di Ama 2010成為了我的至愛，而Castello di Brolio 2010及Antinori Badia a Passignano 2010亦表現出色，果然具備王者風範。
另外有幸晉身首批酒王的還包括Bibbiano Vigna del Capannino 2010、Volpaia Il Puro 2010、Ruffino Ducale Oro 2010、San Felice Il Grigio 2010、Vignole 2009、Losi Querciavalle 2007等酒粉不會陌生的名字。若你有幸遇到Viticcio的Beatrice 2011、Castello Fonterutoli 2010、Castello La Leccia Bruciagna 2010及San Fabiano Calcinaia Cellole 2010，也不要錯過。
不過，酒王並非位位明星相，部份不是呈現出未成熟的苦澀，便是橡木味道過重。畢竟今時今日Chianti Classico總產量佔了超過三成出口到美國，銷量甚至比意大利本土更大，不可能不照顧一下頭號顧客的口味。美國人普遍認為越濃越多橡木桶味代表葡萄酒越高級，加上看慣了的Riserva已經失去刺激作用，Gran Selezione單是名稱已收先聲奪人之效。憑酒精度的高低及釀造時間的長短不可能判斷出葡萄酒的品質，但顧客永遠是對的，你要更大？我給你最大；你要更高？我給你更高。我不禁想起了《This Is Spinal Tap》，電影中的Heavy Metal樂隊希望擴音器更響亮，於是將音量按鈕的刻度由10改成11！

Chianti 地區， 系過度乜野酒都好飲， 氣氛問題。
出口之後就被人“品酒” 唔係“飲酒" 啦。

意大利現也是其一主流產酒國啊

In terms of production volume, Italy is almost the same as France.  Once in a while they even exceed France.

I like to drink chianti Classico when I was in HK, this is perfect
Mach to pork and veal and chicken. Not strong red meat and game. Those strong red meat, I am happy to eat with Shiraz and Cabernet.

Two points need to clarify here:

(1) "Chianti Classico是Chianti八個產區內的其中一個" is not quite correct.  Chianti Classico is the DOCG that truly exist in Chianti (the generic name Chianti).  The others, even they carry the name Chianti in their DOCG name, are actually outside of Chianti.  A typical Chianti DOCG wine will sell for less than $100 in HK.

(2) The aging system in Italy is not a rigid system.  The wine maker do not need to decide at the beginning whether a bottle will be a basic wine, Riserva, Gran Riserva or Gran Selezione.  So for some smaller producers, their unsold wine can automatically became Gran Selezione (13% abv is not difficult for Chianti Classico).
