2 major ways to have it
1. buy it from supermarket as a packet;
2. some high end restaurants have it on the menu.
Either way, cut it thick, at least 1" thick.
hot pan, only cook each side for about 3 minutes to seal in the blood.
turn only once (3 minutes each side).
when you cut it, the centre should be pink. It gets tough when too well done.
It is very healthy as it is lower fat than beef.
Other type of meat you should try is venison (deer meat). It is darker red than most beef. Some say it has some game taste but I have no problem. It also should be done rare only. Again available from specialist butcher which sell game meat, or high end restaurants. Typical Chinese restaurants or normal simple restaurants would not have it. |
