You can COOK with beer. The Belgians have a dish called Carbonnade, in which beef is stewed in beer for hours. You can do this at home: buy a kilo of beef brisket, brown them with olive oil with a whole garlic and 2 red onions. Cover with enough Belgian beer and add 2 chopped up carrots, 4 sliced celery sticks, a bunch of thyme, parsley and 2 bay leave. Bring to the boil then switch off the fire. Leave to slow cook the beef for half an hour and restart the fire until it is almost boiling, but not quite. Switch off the fire again. Repeat this heat up and cool down process until the beef is very tender. Serve with Conchiglie (sea shell pasta) or farfelle. |
