I think the real gem in the Baumard series is the SPECIAL TRIE. This is produced only in years when the grapes are bortrytised and yet the wines are fermented DRY. Amazing stuff indeed when the wine smells flowerly/honey sweet and yet there is no residual sugar on the palate: sweet but not sugarly sweet.
Just like those really sexy women who exudes sex appeal even when wearing plain clothings (think Audry Hepburn).
I love this wine with YUM CHA when the dim sum is tasty and wholesome and you need a strong wine to cut into the fat---yes, dim sums are bloody oily: the average SIU MY has 1-2 teaspoonful of oil in it.
The other gem in the Baumard line-up is the Cuvee de Paon. This is also a Coteaux du Layon and is a sweet wine. In older vintages there are no names on the wine label, but just showing a Peacock (the Paon). This is the wine to drink with JIN-DERW,walnut cookies and sweet seasame paste buns. |
