There is still a big argument whether old vines are better. What I tend to believe is:
(1) The yield for old vines (vine = wine tree) are low, and this automatically contributed to quality. If you are willing to do green harvest (i.e. cut away bunches before the grapes start to ripe) and cut the yield of a young vine to the level of an old vine, you can get similar result.
(2) What old vine did the best is during extreme weather. Just like an old man, they have seen this before and thus know how to handle this and can still produce good grapes even under extreme weather. Young vines just don't have that experience. |
